This Ice Cream Sandwich Tiramisu is what happens when a classic Italian dessert meets Ben & Jerry’s creativity. Coffee‑dipped ice cream sandwiches are topped with a light mascarpone cream and finished with a dusting of cocoa for a dessert that feels indulgent, playful, and surprisingly effortless. INGREDIENTS:
- Ben & Jerry’s Ice Cream Sandwiches (individual packets)
- 150ml double cream
- 125g mascarpone
- 2½ tbsp golden caster sugar
- 150ml strong coffee
- 1 tsp cocoa powder

Brew the coffee
Prepare 150ml of strong coffee and set aside to cool slightly.

Make the cream
In a bowl, whisk the mascarpone briefly to loosen. Add the double cream and golden caster sugar, then whisk until thick, smooth, and softly holding its shape — firm enough to pipe, but still light.

Dip the sandwiches
Quickly dip each ice cream sandwich into the cooled coffee, allowing the cookie to absorb a little flavour without becoming soggy.

Pipe a tight swirl of the mascarpone cream over each sandwich and dust generously with cocoa powder.
