Get Tropical With Sticky Mango ‘Rice-Cream’ Sandwiches
Escape to the tropics, just for dessert! Inspired by mango sticky rice — but with a Ben & Jerry’s twist! — the Sticky Mango ‘Rice-Cream’ Sandwich is a delightful sweet-and-savory treat that’s truly mango-nificent.
INGREDIENTS:
- 300g cooked sticky rice
- 1 tsp vegetable oil
- 1 ripe mango, peeled and deseeded
- Sweetened coconut milk, to serve

Mold the rice into two small patties and spray the inside of the waffle iron. Bring it up to temperature and toast the rice patties until they have a light golden crust.

When they are ready, let them cool to room temperature then slice the tub of Sweet Mango Memories ice cream into discs

Slice the mango into thin slices. Place one ice cream disc on top of one of the crispy rice patties, and top with the fresh sliced mango. Place the other rice patty on top.

Drizzle with the sweetened coconut milk and enjoy!
