INGREDIENTS
- 2 tubs of Ben & Jerry’s Phish Food ice cream, melted to room temperature
- 3 eggs
- 350-450g of assorted day-old bread and/or pastries

Gather all ingredients.

Cut the bread and/or pastries (croissants and brioche work especially well) into small cubes or slices. Put the bread on a baking tray. Either a) let the cubed bread sit out overnight to stale a bit, or b) toast it in the oven for about 10 minutes while your oven is preheating.

Preheat the oven to 350° F. Put your melted ice cream into a very large bowl and add the eggs. Stir to thoroughly combine. Add the staled or lightly toasted cubed bread and mix well. (Because some bread is denser than others, your pudding may benefit from a resting period of up to an hour, after mixing and before cooking, to allow the ice cream and egg mixture to fully saturate the bread. Use your best judgement depending on the bread you choose.)

Prepare your 9” x 13” pan by spraying it with cooking spray or coating it with butter. Put the bread mixture into the pan and bake for 30-40 minutes.

Once it’s finished baking, remove from oven and allow to cool slightly. Serve with a big scoop of Ben & Jerry’s ice cream, and enjoy!
